Today I’m going to teach you how to make some lemon Easter cupcakes. I made these last year and both myself and my family thought they tasted great and looked so cute as well. They really aren’t that difficult to make but it looks like you put a lot of work into them. Hope you enjoy.

Chocolate Nests
Ingredients:
- Chocolate
- Shredded Wheat
- Chocolate Eggs
Directions:
The chocolate nests are relatively easy to make. I went to bulk barn and got some chocolate for melting and some chocolate eggs. They didn’t have shredded wheat though so I had to go to Sobeys and get a full box. I didn’t measure any of this, you just have to go by look for how much you need. The first thing you do is melt your chocolate. The easiest way to do this is to get a small pot and put a little bit of water in it and bring to a simmer. Then, place a bowl on top of it with your chocolate and it will start melting. Make sure the water isn’t boiling or touching the bowl.
Once your chocolate is melted you can start breaking up your shredded wheat and mixing it in your chocolate. (You can substitute the shredded wheat for coconut or pretzels) You will most likely need more than you think. You need to be able to shape these with your hand so if you do that then they fall you will need more shredded wheat added to the chocolate. For the forming I find it easiest to scoop them out with a spoon onto a baking tray with parchment paper then form with my hands and place the eggs on top. Place your nests into the fridge to let them set.
Cupcakes
Ingredients:
- 125g soft unsalted butter
- 125g caster sugar
- 125g flour
- 1/4 tsp baking soda
- 1-1/2 tsp baking powder
- 1/2 tsp salt
- zest of 2 lemons
- 1-1/2 tbsp lemon juice
Directions:
For the cupcakes place the butter and sift in all dry ingredients in a mixing bowl then zest in your 2 lemons and then juice them for a little later. This is easiest to do into a sieve so you don’t have seeds. Then add 2 large eggs and mix on medium for about a minutes. Next, add your lemon juice and mix together. Now you can place your mix into 12 cupcake cases. This is easiest to do using spoons. The tins should be about 2/3 full however, I find it easiest to just distribute amongst the 12 because that is how many this recipe makes. Now you can bake in the oven at 350F for about 20 minutes.
Buttercream
Ingredients:
- 100g soft unsalted butter
- 225g icing sugar
- 2-3 Tbsp lemon juice
Directions:
First thing to do is to beat the butter until it is pale. (3-5 minutes) Next, add your icing sugar in 2 halves mixing in between for a few minutes. Then add 2-3 Tbsp of lemon juice and give another good mix. This step is really just to your liking, I ended up using closer to 3 Tbsp and not to toot my own horn but it tasted amazing!
Assembling
First thing to do is ice your cupcakes. I used a round larger tip and put a good amount in the center of my cupcake moving outwards. This is not easy to do the first time so feel free to practice on some parchment paper before hand. Next if your using the nests for decorating take them out of the fridge and place on top of each cupcake a squishing down slightly.
Now your done! This lemon Easter cupcakes recipe really isn’t that difficult to make but it has a great look to it. Also, I absolutely love the lemon flavor and I’m probably going to make a variation of these every Easter!
