Pumpkin Swirl Cheesecake

Welcome back to another recipe! Today I will be sharing with you one of my new favorite recipes; pumpkin swirl cheesecake. I made this for friendsgiving a few weeks ago and it was a huge hit so I thought I would share it with you guys too.

Pumpkin Swirl Cheesecake

Ingredients:

1-3/4 cups of crushed gingersnap cookies

1/3 cup of melted butter

2 (8 ounce) packages of softened cream cheese

3/4 cups of sugar

1 tsp of vanilla

3 eggs

1-1/4 cup pumpkin puree

1 tsp cinnamon

1/2 tsp nutmeg

Directions:

First thing you need to do is crush your gingersnap cookies. I did this in a food processor but you can also do this by putting them in a bag and hitting them with a rolling pin. Mix the gingersnap cookies with the melted butter and then press into the bottom of your cake pan. An easy to do this is by using a cup to flatten it. Bake the crust at 350F for 8-10 minutes and set aside while you make the batter.

Pumpkin Swirl Cheesecake

In a medium mixing bowl, mix together the cream cheese, 1/2 cup of sugar and vanilla just until completely combined (no big lumps). Next add your eggs one at a time until well combined.Separate 1 cup of the mixture and set aside for later. Finally add 1/4 cup of sugar then your pumpkin, cinnamon and nutmeg.

Pour your pumpkin mixture into your cake pan. Next add drops of the white cheesecake mixture. Make sure they go down far enough so the marble isn’t only on the top. Take a tooth pick or knife and swirl around to make a marble affect. But to not completely combine.

Now you can bake your cheesecake at 350F for 55 minutes. or until your filling is set. Once your cake is out of the oven run a knife around the edges so it won’t get stuck. However, do not remove the cake rim until the cake has cooled. Chill for at least 4 hours before decoration. I just bought some whipping cream that I whipped in my mixer. If you want to make your own like I did just add about a teaspoon of vanilla and  a 1/4 cup of sugar to it once it is almost completely whipped. Next just pipe on top and your done.
